Take a look at these two files in the FOOD section of my Stefan's
Florilegium:

bread-msg        (131K)  9/ 2/98    Medieval breads and grains.
breadmaking-msg  (146K)  9/ 4/98    Period bread recipes and re-creations.

Hmm. Looking at the dates, the latest versions aren't on the website yet.
Go ahead and look at what's there and look again in another week. Or email
me and I'll send the latest versions in text or Word 6.0 format. We just
recently discussed sourdough breads and most of that info may be in the 
most recent versions.
