I find that custard will often go oogie if left to its own devices too
long, like even a couple hours if not stored properly.
I've had good luck with pre-baking the pie shell, filling the tart shell
with the goo, baking, letting cool completely, and then LOOSELY cover with
plastic wrap and let sit in the fridge for a day or so.
