Basic idea for one of these beasties, if you want to keep it entire, is to
cook it as you would a roast pig. Find a pig roaster, or make your own, and
roast on a spit. Use whichever spices you deem appropriate, likely in a
barbecue sauce type mix, and go for it.

PS there are more types of barbecue sauces available than the standard tomato
and sugar thing- look around.
