I don't want to step on Gunthar's toes, as it is his recipe, but the
"non-alcoholic" version only brews overnight, so it doesn't have time to do
much. I understand that the leftovers from the first batch I took to a
shire meeting are bubbling away in the Seneschale's refrigerator. When the
bubbling stops, I'm sure they'll tell me the result. Intermediate tastings
agree that it is surely not "non-alcoholic" any longer. As to the yeast,
Gunthar recommended plain bread yeast.

p.s. Gunthar, I proofed the yeast before I made the batch last night and it
was much better. Thank you for the advice. I tasted it this morning and
now I know what you meant by flowery!
