I don't know the origin of the name, but the Pig was the first self 
service grocery store anywhere, and it originated in Memphis.  They 
have a mockup of it in the Pink Palace, the Memphis museum.  
Personally, my favorite grocery store chain name is Jitney Jungle.  
They still have a few stores in the South, mostly in southern Alabama 
and Mississippi.  
I will look on the Webpage for the miuseum and see if I can find the 
origin of the Pig.
