Yep. I'm pretty sure the cherry tart with the custard under the upper
crust comes from Platina.

You are quoting Beebe's version accurately. She gives an original
recipe, but no attribution, other than to say the recipes in her book
come from Elizabethan and Jacobean sources, presumably English. Her
original recipe uses no cornstarch thickener, just the
berry/sugar/spice/wine compot in a two-crust pie. It looks a bit like "A
Newe Proper Boke of Cokery"...
