1. In the sense of period defined by the SCA bylaws, which is "pre
seventeenth century," Digby is clearly out of period, since the book was
not only published but written entirely in the seventeenth century.

2. In the more elastic sense that has long existed in oral tradition, which
is "pre-1650," the publication of the book is out of period but most of the
book was probably compiled in period.

3. In any case, there is a pretty clear break in English cooking somewhere
between 1500 and 1600. My original claim was not that there were no period
dishes correponding to the generic "stew" as understood by modern Americans
but that I didn't know of any. I don't know the nouvelle cuisine stuff at
all well, so wouldn't be surprised if there were examples in the late
sixteenth century--which is not medieval cooking but is SCA period.
