SC - Cooking technique question

Ras gave us some more of the recipes for his Islamic feast. Thank you, Ras.

But I have a beginner's cook question:

What does *stir down* mean? Does this mean to heat to a boil and then
turn off the heat and stir it as it cools down? How much stirring is
needed, constantly or occasionally?
