I have a similar problem with panforte.  I use greased baker's parchment to
line the pan.  Once removed from the pan, let the cake cool about ten
minutes then remove the parchment.  Remove it too early and it pulls threads
of sugar.  Remove it too late and it is stuck like super glue.
