Personally, the best way to decide whether coarse or finely grated potatoes 
in the way to the 'true' Latke is to shimmy up to a grandma or great grandma 
'Latke' maker. With the bizarre and, oftentimes misunderstood and not clearly 
defined, 'ideas' in modern cookery that are changed every 3 months, relying 
on the 'crones' is not a bad idea when trying to reproduce traditional dishes 
accurately.
uuuuuh, my Grandma is from Lebenon, different food traditions 
entirely. ( different religion too)
