Be vewwy careful of serving wabbit at Easter!  In the "China Moon" 
cookbook, Barabara Tropp (a Jewish woman running a Chinese Bistro, go 
figure) relates: "Our first Easter at the resteraunt, I had the 
mis-guided notion to put a rabbit sandpot with this name (Bunny Stew) on 
the menu.  I found it vastly amusing-not to mention delicious- but that 
weekend's guests roundly ignored it in favor of less symbolic fare."
