At the restauraunt where I learned this technique the owner would just grab a
pot off the coffee machine. Nothing special. I just use regular store bought
commersial coofee made in a regular strength as per instructions on the can.
;-) BUT as with anything else involved with cooking I would suspect that a
nice Kona would yield superior results especially when coupled with a well
marbled beef roast, fresh carrots from the garden and newly harvested
Stutgartter onions. :-)
