Hmmm. A distinction worth pointing out, if it really is a distinction,
is that the leavening called hartshorn is some kind of ammonia
coumpound, and not actually a product from the horns of harts, whereas
actual hartshorn, like horse's hoofs (i.e. high-collagen animal parts),
might well have an application in jellies.

Does anybody know for sure whether hartshorn is really hartshorn?
