IV Forme of Cury
3. To make grounden benes. Take benes and dry hem in a nost or in an
ovene. And hulle hem wele, and wyndewe out the hulkes, and waisshe hem
clene; & do hem to seeth in gode broth, & ete hem with bacoun. (,
despite the name, probably whole beans ground only on the outside to
remove the skin)

The glossary notes : despite the name, probably whole beans ground only
on the outside to remove the skin; served with bacon. See also FENE
BOILES and MAKKE ( in which we are told to grind the 'groundon benes')

His Grace has a redaction on Makke in the Miscellany.

1000 Eggs, II, p. 30. Peys de almayne. 'Take white peas & boil them &
then take them up & wash them clean in cold water, until that the hulls
go off;...'

Something I read recently directed you to rub the beans/peas with your
hands to get off the hull. Head stuffy...can't remember.
