SC - Chocolate

While we're still very much OOP with this chocolate thread, I wanted to
share with you this latest discovery. It is the most incredible
chocolate cake I have ever eaten. TRULY!

Adult Chocolate Cake
8 oz. good bittersweet chocolate
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups sugar]
5 eggs

Grease a cake pan 8 1/4 inches in diamete and 1 1/2 inches deep
(approx).

Break the chocolate into a bowl large enough to receive all the other
ingredients. Set over a saucepan of barely simmering water until melted.
Remove from the heat and cool slightly. Cut the butter into little
pieces and beat into the chocolate. Add the sugar and blend well,
beating thoroughly. In another bowl, beat the eggs until very frothy and
foamy, then gently fold into the chocolate mixture; make sure evrything
is thoroughly combined.

Pour the mixture into the cake pan and place it in a roasting pan
containing enough water to come up 1 inch of the cake pan's side. Bake
in a preheated oven at 350 F for 1 hour, then let it cool completely in
the pan. When cold, remove from the water-filled pan and chill in the
refrigerator overnight. Do not attempt to eat it while still warm. When
ready to eat, run a metal spatula around the edge of the pan and , with
a good thump, unmold the cake. Serve with whipped cream or ice cream.

The only reason I'm sharing such a modern recipe on the SCA-cooks list
is that it really is incredibly good, and anyone at all who likes
chocolate will find it a real killer. This comes from Cooking with the
Two Fat Ladies, 1996. They call it less of a cake and more like a baked
mousse with crispy sides.
