SC - once again bread

I have to say that my favorite baking would be bread...last night at 9pm I
was making overnight yeast rolls......(where you put the dough in the fridge
and then make the next day) first time I am making them, hope they turn out
at least edible...8-)
I am notorious for my ability to kill yeast. (I've
had lots of drafty kitchens.)
But I have a question...I love making sour dough bread.....but to me it is
never sour enough....can it be made sourer ? is that the proper way to say
it even?

I also love *really* sour sourdough--my roots are
showing--and I find I dislike it when people mix
true sourdough with things like buckwheat batter
(for pancakes) or other sweetening agents because
of the sugary America palate.
I love truly sour sourdough pancakes with nothing
but butter on them--they don't call for sweet
syrup (much as I love pure maple). Anybody got
tips for making truly sour sourdough? :-)
