My apologies for the delay, I found some magic on my doorstep last night 
and had to send out the appropriate thanks yous' before proceeding.

My source is a facsimile reprint of  "Ein New Kochbuch" by Marx Rumpolt, 
originally published 1581.  Since I originally discovered (parts of) the 
book on Duke Cariadocs web page I assumed it would be a permissible and 
reasonable source within period.

 I admit to having trouble at thinking of 1580s as "early modern" but it is 
certainly more modern than 12th century ;-).  I love to play with sugar 
work, so this period lets me indulge myself, and Marx has lots of 
interesting listings which I look forward to exploring in more detail.
