SC - Vodka

I bought a used, but beautiful, maple chopping block at the flea market
this weekend.  If I want to sand it down to clean wood  (it's almost 2
inches thick, but the cutting surface is a little tacky) and then refinish
it, would I use oil?  and if so, what kind?
