The questions about agar plus reading over a bunch of period recipes in
books i have and in Cariadoc's Miscellany and some meat-filled feast menus
on-line got me thinking about the dilemma of feeding vegetarians.

So many tasty sounding recipes with meat, relatively few vegetarian recipes
(and it seems they might get repeated over and over)

How do people cope with feeding vegetarians? Do Feast Cooks ever make some
of the main courses without meat, but substituting non-European (but
period) food such as tofu and seitan?

I'm way out West and we do have our share of vegetarians.
