SC - Lamb's Head

Nanna- have you any for Lamb's Head which would be appropriate and possible
for Pennsic? I was planning on just removing the tongue and brains and
cooking them, but a whole head? Hmmmmmm......
Anybody else with some interesting period lamb or mutton recipes? I'd like
to have them ready for our butchering class as soon as possible.
