According to the Miscellany:

Powder douce:
2 t sugar
1 t cinnamon
1/2 t ginger

Powder fort: (actual ingredients not yet known, but this is what His Grace
uses)
1 part cloves
1 part mace
1 part cubebs
7 parts cinnamon
7 parts ginger
7 parts pepper
all ground
