I think the original and Master Cariadoc's redaction can be found in this
file in the FOOD section of my Florilegium, as well as some other recipes,
both period and modern:

There is a book edited by C. Anne Wilson on the preservation of foods. While much
of what it covers is out of period, it has a fair amount of material which is in
period. Unfortunately, I don't see it listed in my bibliographies and I'm not
currently in good enough physical shape to go scrounging through my library for
it. Perhaps some one else knows the book of which I speak.
