Check these two files in the FOOD-BREAD section of my Florilegium:
bread-msg        (136K)  8/26/99    Medieval breads and grains.
breadmaking-msg  (186K)  4/13/99    Period bread recipes and re-creations.

There are several messages discussing "horse-bread" in the first file as well
as a recipe recreation. That same recipe recreation is also given in the second
file. There are only a few actual period bread recipes and horse-bread is not 
one of them.
