Alex Clark/Henry of Maldon boldly stated:
>>>  All chocolate is brown.

Whereupon the wise Lord Ras responded:
>> White chocolate is not brown. It is white. :-)

Whereupon Bonne of Traquair did inform:
> So-called "white chocolate" has no cocoa solids, merely cocoa butter.
> Cheaper brands not even much of that. It is the solids that give the
> flavor and make it "chocolate". The manufacturer calls the white
> cocoa butter and sugar and VANILLA confection white chocolate
> becuase who would buy it if they named it what it is?

Ras continued:
>> Using white chocolate with a few drops of commercial yellow food
>> coloring (not period but either is chocolate in the form it is being
>> served) would provide yolk that tastes of chocolate.

Bonne countered:
> Ick. No, it would taste of cocoa fat and vanilla.

Ras offered:
>> Lady Zara of Mountain Confederation makes wonderful chocolate
>> candies in the shape of the household cat that are blue and gold.
>> Again chocolate that is not brown.

And Bonne replied:
>Not brown, not chocolate. Merely candy. Vanilla flavored candy at best.
>Probably rich and fatty and sweet, but not chocolate.

Ras in his usual manner concluded:
>> Documentation, please concerning your statement that all chocolate
>> is brown....:-)

Surface mail address: PO Box 854, Kings Cross NSW 1340, Australia
And Bonne emphatically answered:
> I 'm one of those chocolate purists. That abomination called white
> chocolate is a waste of time. But then, I'm barely willing to agree that
> the brown confectionary used to make chocolate easter bunnies is
> chocolate. I only eat chocolate of that quality when really desperate.
> HIgh quality "white chocolate" is a better candy, but won't fix a
> chocolate craving.

Far be it from me to post a "Me, too!" message, but, well...

I remember when i first had so-called "white chocolate". I was, if i
remember correctly, a teen, back in the middle ages of the 20th
century. What a disappointment it was!

As someone who, like Bonne, only eats milk chocolate when absolutely
desperate, i do not care for a confection that consists of fat, milk,
vanilla, and a ton of sugar. There is no chocolate, nor any cocoa, in
it! It is made of *cocoa fat*, not chocolate. Now "cocoa butter"
smells wondrously like chocolate (i have a jar i use as a moisturizer
for my knees and elbows), but it just ain't chocolate! It is the fat
within cacao, without the chocolate. And so-called "white chocolate"
may smell of chocolate, but sure doesn't taste of it.

To make cocoa powder, the fat is extracted from the chocolate. The
industry has all this fat left over and wants an economic outlet for
it. And i have no argument with that. But cocoa butter is not
chocolate. It was given the name "white chocolate" in order to market
it better. What would you be more willing to buy, cocoa fat? or
"white chocolate"?
