Alys Katherine, of all people, asks:

The obvious response is "why not make them out of something used for 
such purposes in period?"
 
One might try sugar paste--on which subject Alys Katherine is 
something of an authority--or Marzipan, or ...   . What is the point 
of going to all that trouble in order to do something strikingly out 
of period, thus making it harder for people at the event to pretend 
they are really in the Middle Ages, when the same amount of 
trouble--probably less if you use Marzipan--could produce something 
that was just as impressive and period as well?
