I think caster sugar is slightly less pure (like if it were, say,
superfine Muscovado sugar) than the typical American granulated sugar.
It's hard sometimes to determine the real color of some substances when
they're ground really fine.

I've heard it said that caster sugar is named for the fact that it could
be cast (i.e. sprinkled from a gizmo like a salt shaker) on things like
fritters, doughnuts, that kind of thing.

It appears to be nearly identical to confectioner's sugar, but possibly
coarser to a miniscule degree, and without the starch.
