Perhaps some of the composts, which are vegetables and fruits in a vinegar? 
I think several of these are mentioned in the pickled-foods-msg file.

Fruit preserves and jellies seem to be fairly late in period, probably
because of the rarity and cost of sugar. If these are of interest, there
has been a fair amount of discussion here on these. I would take a look
at these files in the FOOD section of my Florilegium for this info:
