>From Arizona Highways, September 1999.  This recipe is attributed to Wanda 
Nelson, Karen Yazzi, and Rita Begay:

Navajo Fry Bread

10 cups flour
4 tsp sugar
2 tsp salt
water
2 to 3 cups oil or shortening

Mix dry ingredients.  Add water gradually until the dough becomes rubbery but 
not runny.  Let it sit for 3 to 4 minutes.  Bring shortening to 140 degrees 
F.   Roll batter into round, thin patties, 4 to 5 inches in diameter, as you 
would pat out piizza dough.  test the hot grease with a small piece of dough. 
 Now you're all set to fry the patties one at a time in the oil, turning once 
when light golden brown. 
 
Great fry bread is perfectly round and nice and fluffy. Drizzle with honey 
and butter for a sweet treat, or serve with your favorite taco or tortilla 
toppings, or with breakfast, or sandwich fixings.
