Well, I made pölsa this past weekend using pork liver and kidneys, as
well as ground venison. Turned out quite nice. I am told that when it is
made from moose it turns out grey (there was a voice in the background
insisting that if it wasn't made from moose by her grandmother, it
wasn't *real* pölsa; she still ate it, so I assume it was an acceptable
substitute).
