Our church ladies' group in Florida sold pecans from Georgia as a bazaar
fund raiser. We also got from our supplier pound packages of ground
pecans. If you have a chance to get any of these for your mundane
cooking, do it! Fish, chicken, duck parts, almost anything can be
dredged in them with wonderful results. Throwing some of the pecan meal
into stuffings or cake batters was also a wonderful treat. And
sprinkling on pie crusts, mixing with soft cheese for spreads, adding to
the butter and keeping it warm long enough to release the flavors before
tossing with veggies, can't even remember all the things I did with it.
Much cheaper than the pecan halves; we could be liberal.
