98 Receta para hacer alcorzas

     Moler el azúcar y pasarlo por cedazo. Y después de
pasada por el cedazo, echarla en un almirez limpio.
Deshacer un poco de ámbar y almizcle en agua de azahar, y
deshacer el azúcar con aquella agua, echándole poco a poco
el agua. Y desque esté hecha masa el azúcar, hacer las
alcorzas y cocerlas.

Recipe for making icings
     Grind the sugar and pass it through a sieve.  And
after it is passed through the sieve, put it in a clean
mortar.  Dissolve a little amber and musk in citrus flower
water, and dissolve the sugar with that water, adding the
water little by little.  And when the sugar is made into
dough, make the icings and cook them.


99 Receta para hacer hiel para el rostro

     Tomar cuatro hieles de vaca, y una escudilla de zumo
de limas, y otra escudilla de agua de lana sucia; y cuatro
maravedís de mirra, y cuatro de atíncar, uno de solimán
piedra; una raíz de azucena muy lavada y majada, otra raíz
de taragontía, un poco de miel cruda. Hierva todo esto en
una olla vidriada hasta que se ponga espeso. Y tendráse
aviso que la mirra, y el atíncar, y el solimán y la miel se
ha de hechar después de haber hervido con las otras cosas.
Y después que haya espesado, colarse ha por un paño de
lino. Y puesto en una redoma, pondrán con ello cuatro
maravedís de alcanfor.

Recipe for making bile for the face
     Take four cow gall bladders, and a bowl of lime juice,
and another bowl of dirty wool water; and four maravedis of
myrrh, and four of borax, one of stone soliman[1]; a
well-washed and ground white lily root, another root of
Dracunculus vulgaris, a little raw honey.  Boil all this in
a glazed pot until it thickens.  And be advised that the
myrrh, and the borax, and the soliman and the honey have to
be added after it has boiled with the other things.  And
after it has thickened, it has to be strained through a
linen cloth.  And [when it is] put in a flask, you will put
with it four maravedis of camphor.

100 Conserva para encarnar los dientes

     Tomar dos onzas de alumbre quemado, y otras dos de
sangre de drago, y una cuarta de canela, y una ochava de
almástiga. Todas estas cosas molidas y pasadas por cedazo,
las echaréis en diez onzas de miel cruda en una ollica de
barro. Y puesta al fuego, hierva hasta que espese como
letuario. Y haréis una tirica de lienço y tended de esta
conserva por la tirica. Y puesta sobre las encías. Si la
pusiéredes de noche no la quitaréis hasta la mañana; y
enjuaguaréis la boca con vino o con agua, con lo que más
quisiéredes, caliente.

Preserves for healing the teeth
     Take two ounces of burned alum, and another two of
dragon tree resin, and a quarter of cinnamon, and an eighth
of mastic.  All these things ground and passed through a
sieve, put them in ten ounces of raw honey in a small clay
pot.  And put on the fire, boil [it] until it thickens like
electuary.  And make a little strip of linen and spread
[some] of this preserve over the strip.  And put [it] over
the gums.  And if you put it on at night do not remove it
until morning; and rinse your mouth with wine or with
water, with what you prefer, hot.


101 Receta para hacer pasticas de perfume de rosas

     Tomar una libra de rosas sin las cabezuelas, y siete
onzas de menjuí molido. Echar las rosas en remojo en agua
almizclada y estén una noche. Sacar después estas rosas y
expremidlas mucho del agua, y majadlas con el menjuí. Y al
majar, poner con ello una cuarta de ámbar y otra de
algalia. Y después de majadas, hacer vuestras pasticas y
ponedlas cada una entre dos hojas de rosas, y secadlas
donde no les dé el sol.

Recipe for making rose-scented tablets
     Take a pound of roses without the flower heads, and
seven ounces of ground benzoin.  Put the roses to soak in
musk water for a night.  Remove these roses afterwards and
thoroughly squeeze out the water, and grind them with the
benzoin.  And when grinding, put with it a quarter of amber
and another of civet [musk].  And after [they are] ground,
make your tablets and put each one between two rose leaves,
and dry them away from the sun.


125 Receuta para hacer un obispo de puerco

     Dos libras de puerco que sea de lomo y haya estado un
día en adobo con la tripa. Lavadas después y picadas con
una docena de huevos cozidos y con una libra de manteca. Y
después de picado, echallo en una almofía y juntar con ello
una docena de huevos crudos, y cuarta y media de clavos, y
canela molida, y un poco de pimienta, y encorporarlo todo
muy bien. Y desque encorporado, y puesta la sal que fuere
menester, henchir la tripa dello y poner a trechos las
yemas de huevos cocidas que quisieren.

Recipe for making a pork bishop [1]
     Two pounds of pork that is from the back and has been
a day in marinade with tripe.  Washed afterwards and minced
with a dozen cooked eggs and with a pound of lard.  And
after it is minced, put it in a washbasin and  mix with it
a dozen raw eggs and a quarter and a half of cloves, and
ground cinnamon, and a little pepper, and mix it well.  And
when it is incorporated, and the necessary amount of salt
added, fill the tripe with it and put in parts the cooked
egg yolks that you would want.


127 Receta para hacer aceite de azahar

     Las almendras secas de las más frescas que halláredes,
mondadas y partidas por medio, puestas a lechos entre
azahar y tenerlas así nueve días. Majar las almendras mucho
y sonrosarlas en una bacía, y exprimir el aceite de ellas,
y echar dentro un poco de almizcle, y ámbar. Y poner una
olla de agua al fuego. Y como hierva, poner dentro el vaso
donde estuviere el aceite, de manera que no llegue el agua
al aceite, y reciba tres o cuatro hervores. Y luego sacarlo
y guardarlo emvuelto en algodones.

Recipe for making citrus blossom oil
     The freshest dry almonds you can find, shelled/peeled
and split in half, put in layers between citrus blossoms
and have them thus [for] nine days.  Crush/grind the
almonds well and turn them pink in a basin, and squeeze the
oil from them, and put in a little musk, and amber.  And
put a pot of water on the fire.  And when it boils, put
inside the glass where the oil is, in a way that the water
does not reach [i.e. get into] the oil, and it gets three
or four boils.  And then remove it and keep it/put it away
wrapped in cottons.
