vezes means frequently IIRC from highschool. If I had to go with what I know about
spanish sentance structure, high school spanish and cooking methods, I would guess
that the cleaned quinces are cut into quarters, simmered in a fairly shallow pan
and the quinces are turned frequently [well, they are rather...um...solid, that is
a good way  to put it ;-)  ]
