You might try Anthimus or Byzantine sources... 

Sometime in the last year our local Byzantine specialist, Master 
Demetrios, formerly of Calontir, had some recipes for 
hot-water-plus-spice beverages from a Byzantine monastic source that we 
tried at Cooks Night.  

Surprisingly interesting.  I think one was plain black pepper in hot 
water.  Can't remember the others, maybe cardamom...
