de alli = from here  (opposite of alla, meaning "there")

despues = then  (as in "and then, to cut the long ribs" y despues cortar las costillas de largo)

estan = they are (third person plural of estar transient state verb meaning "to be")

hanse = most likely the second lerson of the verb form hanser 

vn = seems to be actually UN, which means one

Haziendo appears to be a forebearer to haciendo (gerund form of hacer, to have) hence, haziendo vn corte al trabes por medio means "having one, cut to the middle beams"

I offer this alternative trnaslation:

(you) Cut from the sheep chest

********  The chest of the sheep is cut, having one cut to the middle beams, and from there you cut as much meat as you will be able to remove, then to have pedacos of ternillas and huessos to tier, and then to cut the ribs lengthwise, such as they are, and hanse to us to divide one by one  ***********

adds more to the picture, but not completely.  I hope this has been helpful.

Trying to use an on-line translator(ok stop laughing) I am getting a lot of 
it, but could use some help.  Below is what the book had and then the 
translation given.  Thanks for any help.  No Stefan I have not looked at 
your files yet for Spanish cooking terms or words yet.
