"Manged" is claimed, in Austin's glossary to the Two Fifteenth-Century
Cookbooks, to be synonymous with "manchet". I don't know if it's true,
but it's at least a reasonable possibility.

Leches are slices, as in lechemeat, a food thick/firm enough to be
sliced, as opposed to a running pottage.
