My Arab food expert tells me that there was no use of Soda as a leaven in
Medieval Arabic bread, although there are one or two strange recipes calling
for borax. If the soda in this recipe was a leaven then this is probably a
Chinese thing after all. More research needed here and I will bear this in
mind in the future. I was not alerted to the isse bu am now. Paul
