This being an Navaho dish it used mutton instead of pork.


5lbs. mutton. you can use stewing beef.
  3 lbs onions  cut up in med. pieces
  3 heads garlic seperated into cloves and peeled.
  Hand full small red chillies(dry) New Mexico, or any you like.
  1 Tablespoon salt

  Large (indrustrial) can Hominey.  Before this was available The corn was 
soaked lyme I believe, I will have to call my cousin to find out.
  1lb beans.  You can use pinto or any you like she used Anastizi beans.

Put the meat, onions, garlic, chillies and salt into a large pot and add 
water to cover by at least 3 inches.
Bring to a boil, reduce heat and simmer for 4 to 6 hrs, untill meat and 
vegs. fall appart. Keeping at least one inch of water covering the contents.
Remove meat and vegs from pot. Add washed and picked over beans. Bring to 
boil, reduce heat and cook beans untill soft.  Tast for salt.
Add hominey (and large can of tomatoes if you want a red dish)Heat through.
  Spoon homeny/bean mixture into soup bowls.  Top with reheated meat 
mixture.  Or you can do as some do on the Res and add the meat mixture back 
to the pot and mix it all togather before serving.
