Well, are you trying to cook a Scottish feast or an English feast being 
served to Scottish people?

Depends on your perspective and what you want to achieve. You could work with 
archeological evidence, food availability and work backwards from close to 
period sources. This is the route I took when asked to produce a 12th C Irish 
feast. It is possible, just not from extant recipes of that period and 
location.
