When I did a presentation, I kept the foods hot via a crockpot (the table was 
near and electric outlet and I brought my own extension cords after speaking 
with the event steward). I also bought individual spoons and small paper oz. 
cups for tasting. (I kept these off the table until actually serving) and I 
kept the crockpot at the back behind the "pretty" display. I avoided the 
foods that needed to be kept cold, but kept a cooler under the table for my 
cider.....

I have been known to travel with my portable oven as well for my cooking 
classes.
