Greetings again, 
	I am posting to my own question. :-)   I am not sure lefse, even if it
IS period, would work.  I have been thinking about it and realize I would
have to cook it Thursday night - drive to Kansas on Friday and not be
able to put it out for A&S display until Saturday.  I am just not sure
how that would hold up, not having made it before.  Lingonberries might
work if they are period and I can find some frozen somewhere to cook down
into sauce, but this idea doesn't seem like it would be good travel food.
	I am interested in trying a Norse dessert, though.  It would need to
travel well and not require me to cook after Thursday evening.  I have
heard Rosettes are period but don't have any documentation for that.  If
anyone has any ideas, or any reference sources, I would be most
appreciative.  And while I would prefer to do a dessert, I am open to the
idea of some other food that I could make for A&S that would travel well
- - preferably at room temp.

PS.  I would still like to know if lingonberries and lefse are period.  
I won't always need to travel - I have offered to try to cook my first
feast for an event later this year and some interesting ideas have been
suggested for themes for the event that might work with early period
Norse food for feast.
