SC - Mediaeval cookbooks to begin with

The inquirer said they were not ready to start working out their own 
recipes from originals.

Please bear in mind that there are many of us who can cheerfully 
follow a modern-style recipe for a mediaeval dish, and make 
modifications to it based on the original, but are not always 
confident about working direct from the original.
