any recipe that uses canned salmon can use canned mackerel (say that three
times fast, Bal), my favorite is mackerel patties:
1 18oz can of mackerel
2 eggs
1/2 c crushed crackers
1/2 teaspoon tarragon
Mix together (either mush the bones up fine or remove them first ) and form
into 2" patties. Fry in butter until brown and serve.
My mother used to pour  peas in cream sauce over them, but my husband
doesn't like peas, and my daughter doesn't like sauces, so I haven't done
that for a while; as far as I remember, it was canned peas in a simple white
sauce, a la Better Homes and Gardens.
