QUEEN'S PUDDING

Similar to a baked egg custard, topped with jam and meringue.

 2 cups fine WHITE, soft breadcrumbs 4 cup scalded milk 4 eggs, separated 1 
cup sugar salt to taste Red currant jelly or jam

    Soak breadcrumbs in milk.

     Beat egg yolks with 1/2 cup sugar and add to milk mixture, adding salt 
to taste Pour into an ovenproof baking dish,
standing in hot water. 

     Bake at 350f for approximately 1 hour, or until set. Whip egg whites 
with remaining sugar until they peak. Pipe in criss cross
fashion over the top of baked pudding, filling the resulting holes with 
jelly. 

     Bake at 400f for 5 minutes or until browned on top. Serve hot or cold.
