Earlier I mentioned Megan, who runs "Guild of Limners" shop at Pennsic as
a source for oak galls.

Looking through last years Pennsic booklet, I found her address listed
as:

While I have info on acorns being eaten, I don't have anything on
Oak Galls being eaten, so no food content to this message, sorry. :-)
