David's _Harvest of Cold Months_.  It's an excellent book and well-
documented.  If you think you want to serve ice cream (not period)
or ices (period for certain places) or just want to know about
keeping things cold on ice, this is a book to get. It will help
make you sound very knowledgeable!  As with most stuff, some things
are "period" some places and not in others.
