Hi Ilia,

I'm sure there are many on the list who can help you with this.  While I've 
never cooked one, I have eaten them.  They are really rich and a little 
goes a long way.  My sister used to use a chestnut and oyster stuffing that 
really complimented the dark flavors of the bird.
