It is always recommended that the piecrust dough be put in the fridge for a 
time before working it.  At that time (if it is summer) I usually put my 
rolling pin in the fridge too and a cool cloth on my marble counter.  Also, 
I'm one of those that adds a bit of vinegar to my mixture.
