Here in England we have the Food Hygiene Primary Certificate from the Royal
Institute of Public Health and Hygiene. Anyone working within the hotel and
catering industry has to do it. The course covers:

- - food hygiene  
- - food poisoning 
- - personal hygiene  
- - cross-contamination 
- - cleaning and disinfecting  
- - the Food Act 

It takes about 8 hours, and I've been fortunate enough to find someone who
plays with us part-time who is authorized to teach it. Another cook and I
are trying to arrange a weekend course in the first quarter of next year,
probably in Wales as one of our members there has a huge kitchen.  If anyone
on the list in the UK is interested, email me and I will put you on the
update list. It will cost a fee to cover Anne's expenses, but won't be the
?50 that colleges usually charge for this course.
