Duh.  Yeah, USDA is really what I meant to say.  In any case, it's good to
hear about the meat lockers, since they might be what we need to allow us to
serve the meat (one other thing I've heard, from the hunter types, is that
for venison to be at its safest, it needs to be frozen for two months for
the best chance to kill bacteria and the like... looks like it's time to
start asking now.  Can you tell that I don't hunt?)
