Actually, you can and do, if you get the proper sort of oven thermometer.
The reason that you might want to do so, is because different ovens will
work differently, and may well change running temps significantly during the
course of a days cooking- the oven thermometers are to make you aware of any
such changes before you ruin your foods.

It's much more critical with baked goods like Bear's specialty, bread, and
with other baked goods such as pies, but if you're doing a roast, you also
want to know that your heat is running high or low- you want your meats
ready when you're scheduling them to be ready, not an hour or so early or
late.
